Getting creative with peanuts
Chefs at the Culinary Institute of America wowed delegates with some novel peanut-inspired recipes from peanut flour-based crepes to dark chocolate peanut smoothies; peanut gnocchi; peanut farro and mushroom burgers; peanut chile-lime dipping sauce (for spring rolls); artichoke peanut pesto (pictured); spicy peanut hummus; and peanut horchata.
Those with fewer culinary skills interested in incorporating peanuts into their daily diets might also consider stirring some peanut butter in to their oatmeal in the morning; sprinkling chopped peanuts on their granola, stir fries and salads; stirring peanut butter into stews, sauces, smoothies and shakes or using it as a dip for veggies and fruits.
