Liquid form of Fibersol soluble fiber can help solve no-cal mouthfeel issues
Alternative natural sweeteners such as stevia can replace sugar’s sweetness, and formulators are learning how to make these taste increasingly good. But they can’t replace sugar’s velvety mouthfeel, which is where the new liquid form of Fibersol-2L comes in. And the new ingredient can help improve flavor profiles, too, giving formulators another arrow in their taste modification quiver.
Doris Dougherty, Fibersol technical service representative with ADM, said the new liquid formulation will save manufacturers time that would otherwise be spent on getting the mixing time and liquid blend right when using a powdered ingredient. In this case, the ingredient can go right in, and the ingredient is heat- and acid-stable with low viscosity and is clear in solution, making it easy to work with, she said.d
“Fibersol-2L allows for bulk handling and ease of incorporation, saving the manufacturer time. We do the hydration for you, so you get a smooth blend, yet benefit from skipping the mixing step, for increased efficiency and lower costs,” Dougherty said.
Fibersol has been studied for various health effects including blood glucose modulation, benefits in the gut microbiota of obese children, and in promoting satiety.
